Oh How I Love the Classic Baked Potato

I think I could eat these almost everyday. I just love the salty skin and buttery inside of a warm baked potato. When I was a little kid and burned calories by just breathing, I fell in love with potato skins. "One Potato, Two Potato" had a Mexican version of potato skins. I think they would fry the potatoes, add a little meat and cheese, melt in a broiler than load it up with sour cream, salsa and jalapeƱos. I still remember the taste and how much I looked forward to ordering them on the times we got to eat junk food at the mall. Now as an adult, I know that I should not eat them (plus I cant find them anywhere, hehe) so I opt for a healthier version. Really I think any version is probably healthier than those potato skins. I love potatoes in almost all forms but if I have a choice this is my favorite way to eat them.
  • Heat Oven to 350
  • Scrub Potato, Poke some holes all over the potato
  • In a plastic bag, pour some in olive 0il (enough to coat the potatoes)
  • Add potatoes and shake
  • Sprinkle some kosher salt in bag, shake a little more till potatoes are evenly coated.
  • Place directly on the center rack, place a baking sheet on lower rack to catch olive and salt drippings.
  • Cook until nice and golden brown, about an hour, depending on the size
  • Slice down the center of the potato, garnish with favorites and enjoy!
